This is one of my favorite breakfasts and it's unbelievably easy. I wholeheartedly think breakfast is the most important meal of the day and I can definitely tell a difference when I don't eat it! Because it's so easy, when I'm meal planning and prepping on Sunday, I'll make up a bunch of these and put them in the fridge so I can grab and go before class! They'll keep for at least five days--I haven't had any last any longer. ;) You can also totally adjust the sweetness levels as needed; keep in mind what topping you'll use because that impacts the taste!
I also tend to eat them cold (and straight of the jar--I'm sorry about my manners, Mom), but if you like hot oatmeal, I don't see why you couldn't heat them up...
- 1/4 c. rolled oats
- 1/3 c. milk (I use almond milk)
- 1/2 Tbsp. maple syrup
- 1 tsp. vanilla (this is a LOT, so adjust to taste!)
- 1/2 Tbsp. chia seeds
Put into a container--I use Mason jars--and shake to blend. Refrigerate until use.
My favorite toppings:
- 1/2 a banana and a handful of walnuts
- Dried cranberries and pecans
- Diced apple and cinnamon
